Introduction

Ingredients

    * Egg, fresh, 1 medium (remove)
    * *Potato, raw, 1 medium (2-1/4" to 3-1/4" dia.) (remove)
    * *Courgette, 75 gram(s) (remove)
    * Olive Oil, 1 1tsp (remove)
    * Salt, 1 dash (remove)
    * Pepper, black, 1 dash (remove)

Directions

Peel and slice the potato into rounds. In a small omelette pan,gently fry potato in the oil until all coated - do not allow to burn. Cover and steam slowly for around 10 mins until the potato is beginning to soften. Meanwhile, lightly beat the eggs in a bowl, add salt and pepper to taste. Chop courgette into small slices,add to the egg in the bowl. When potatoes are ready add to egg and mix in bowl. This warms the eggs and helps them to cook through quicker. Pour everything back into the pan allow to cook for around 5 - 6 mins until base is brown. Run round edge of pan with a knife and when the egg on the top is set, place an upturned plate on the pan and carefully flip... slide the omelette back into the pan and finish for around 5 mins. Turn heat off and leave to cool. Serve.
