Introduction

Ingredients

    4-6oz portions of skinless atlantic salmon fillet
    2 lemons, halved
    4 cloves garlic, in their skin
    2T evoo (extra virgin olive oil), divided
    S&P
    2 fennel bulbs, rinsed and sliced thin
    1 tsp chopped fresh rosemary
    1 tsp honey
    4 cups mixed salad greens

Directions

Yield 4 servings
Preheat oven to 400 degrees.

On a roasting pan, pile sliced fennel and drizzle with 1T evoo. Toss to combine and spread evenly on pan. Plunk 4 lemon halves and scatter garlic cloves about.

Roast for 6-8 minutes.

Remove from oven and nestle salmon pieces among fennel. S&P to taste.

Return to oven until salmon's cooked, 12-14 minutes.

Remove garlic from skins and mash in a small bowl. Squeeze lemon juice over garlic. Add 1T evoo, 1 tsp honey and 1 tsp chopped rosemary. Whisk together.

Load plate with salad greens, top with fennel and piece of salmon. Drizzle with 1T of dressing. Enjoy!

This is tasty served at room temperature if you'd like to make it ahead of time, drizzle with dressing just before serving.
