Ingredients

Sauce
1 large tomato coarsely chopped
1/2 large onion chopped
2 tbsp chopped celery
1/4 tsp of paprika
1/8 tsp of pepper
1/8 tsp of red pepper sauce
Fritatta
2 tbsp margarine
1/2 large onion
3 cups chopped spinach
3 large eggs
6 tbsp of egg substitute (3 egg equivalent)
1/8 tsp of thyme
1/8 tsp of salt
1/8 tsp of pepper
30 grams of low fat mozz cheese
Directions
To make sauce toss all ingredients into a saucepan and cook. Set aside and keep warm.
For Fritatta, fry onion in margarine and then add spinach until wilted. Spread evenly in the pan and pour eggs over top. Cover and cook on a lower setting until eggs set.
Sprinkle with cheese.
Cut into 4 servings and pour sauce over and serve!
