Ingredients

    1 spray cooking spray
    2 lb lean beef round, well trimmed (use boneless bottom round rump roast)
    1/2 tsp black pepper
    1/2 tsp table salt
    2 medium onions, sliced
    1 3/4 cup(s) water
    1 packet onion soup mix
    1 1/2 Tbsp balsamic vinegar
    1 tsp dried thyme
    4 medium uncooked red potatoes, scrubbed and quartered
    1 pound baby carrots

Directions

Brown roast on all sides, put into crock pot, cook on low for 8-10 hours.
