Introduction

The easiest egg salad (or deviled eggs) you will ever make. The easiest egg salad (or deviled eggs) you will ever make.
Number of Servings: 1

Ingredients

    2 hard boiled eggs
    1 T. sweet pickle relish
    1 T. light mayonnaise
    Salt and pepper to taste

Directions

For Egg Salad:
Peel and chop up the hard boiled eggs (or just squish them with a fork into small pieces). Add the remaining ingredients and mix. That's it! My favorite way to eat this egg salad is on 2 slices of Francisco Sourdough (only 110 calories for 2 slices!) with some lettuce and dijonnaise. Yum!
For Deviled Eggs:
Slice eggs in half and remove yolks. Mix the yolks with the mayo, relish, salt, and pepper until smooth. Stuff the egg whites with the mixture to make easy deviled eggs. Just sprinkle a little paprika on top if you like and you've got hors d'ouvres!

    I prefer dill relish or no relish to the sweet, & often substitute chopped herbs. Use Kraft mayo with olive oil - only 45 cal/T! - 4/27/11

    This is a staple for me. Like others, I might make adjustments according to my mood . . . . might and a bit of onion, or sometimes substitute 1/4 cup of no/low fat cottage cheese for one of the eggs, a dab of mustard can spice it up too. Such a versatile food! - 4/5/09
