Number of Servings: 20

Ingredients

    Zucchini, 2 cup, shredded
    Scallions, raw, 1 cup, chopped (remove)
    Egg, fresh, 3 medium (remove)
    Flour, whole grain, 1 cup (remove)
    Salt, 1 tsp (remove)
    Pepper, black, 1 tsp (remove)
    Olive Oil, 2 tbsp (remove)

Directions

1) Wash, peel and shred zucchini.
2) In a mixing bowl, beat the eggs and add all the ingredients. Combine well.
3) Form the mixture into patties.
4) In non-stick frying pan, heat the olive oil. Once heated fry the patties making sure they become golden and crispy.
5) Remove patties from the pan and place on paper towel covered plate.

    Incredible!
    I put them in big ziploc bags and froze them. Whenever I need a side dish, I just pop 4 in the oven to make them hot and crispy instead of potatoes for my boyfriend and I. Really good! :) - 6/3/10
