Introduction

I usually put in onion, carrots, celery but I only had onions and potatoes this evening. I usually put in onion, carrots, celery but I only had onions and potatoes this evening.

Ingredients

    About 1/2 of chicken from a roasted chicken
    6 cups of chicken stock
    1 onion, chopped
    3 cloves garlic sliced
    2 large potatoes (what ever veggies you have on hand)

    2 cups whole spelt
    2 tsp baking powder
    1 tsp salt
    1 cup almond milk, unsweetened

Directions

makes about 8 one cup servings

put chicken stock in a pot, add chicken, veggies, garlic, heat over medium heat til veggies get tender.
mix spelt, baking powder, salt and almond milk in a bowl. let sit while soup is heating. When veggies are tender. Drop biscuit dough with a large spoon on to soup, drop in 8 spoonfuls. Cover and continue heating for about 10 min, until the biscuits are steamed thru. Serve with one dumpling in each bowl.
