Ingredients

    Banana, fresh, 3 medium (7" to 7-7/8" long) (remove)
    Egg, fresh, 2 large (remove)
    Olive Oil, 2 tbsp (remove)
    Vanilla Extract, 1 tsp (remove)
    *Quaker Oats 100% Natural Whole Grain oatmeal, 0.5 cup (remove)
    *Quaker Oats - Quick 1 Minute - Dry, 1 cup (remove)
    *Flour - Gold Medal - Self-Rising - 1/4-Cup, 2 serving (remove)
    Baking Soda, 1 tsp (remove)
    Baking Powder, 1 tsp (remove)
    Cinnamon, ground, 1 tsp (remove)
    Salt, 1 dash (remove)
    **Flax Seed Meal (ground flax), 4 tbsp (remove)

Directions

Preheat oven to 350 and line 12 muffin tins with linters.

Mash banana in large bowl. Add eggs, vanilla and olive oil. Beat all together with fork until most banana lumps are gone.

Mix remaining dry ingrediants in a smaller bowl. Pour dry into wet and mix lightly. Put two Tbps. batter into each muffin liner. Bake for approx. 20 minutes or until toothpick comes out clean.

    The 1/4 cup flour didn't come up on the nutrition count/says 0. These are very nice muffins with the banana sweet enough, especially if it is very ripe. I add unsweetened applesauce, nonfat greek yogurt or even apple or pumpkin butter for the oil. Like mix of grains. - 2/20/18
