Ingredients

1 green bell pepper
1 red bell pepper
1/2 onion
1 small zucchini
3 garlic cloves
1 tbsp extra virgin olive oil
1 tsp black pepper
1 dash salt
1/2 a lime
Directions
chop 1/2 an onion, 1 small zucchini and 2 bell peppers of varying color
mince garlic
heat pan and add 1 tbsp extra virgin olive oil, 1/2 an onion, garlic and sweat them over a medium heat. When the onions are starting to become partially translucent add bell pepper and zucchini, saute over medium heat for a few minutes until zucchini is cooked through. Sprinkle salt and pepper over all and mix, then squeeze the juice of 1/2 a lime over the whole thing, stir and serve.
Makes 3 or 4 servings
It's really easy and quick!
