Introduction
A yummy and healthy substitute for meatballs. The texture in a fine bread crumb based "neat ball" may be a little closure to an actual meatball, but the nutrition benefits from using beans far outweighs the texture aspects, and they are still pretty close. Ingredients

1 package frozen chopped spinach, thawed and squeezed dry
1 and 1/2 C cannellini beans (or 1 can), cooked, rinsed and drained well
1/2 C grated parmesan cheese
1/4 C flax meal
2 - 3 T butter, melted
1 egg, slightly beaten
Garlic (crushed cloves or powder) to taste - I used at least 2 t of powder
Oregano to taste (2 - 3 t)
Directions
Coursely pulse rinsed, drained beans, flax meal, parmesan and spices in blender. Stir in the melted butter and egg.
Roll into walnut size balls. Freeze. Bake as many as needed on a cookie sheet at 350 for about 30 minutes (until golden brown and crispy on the outside).
Makes about 24 - 28 small meatballs.
