Introduction

My version of a popular Italian chain restaurant's delicious soup. Skim milk was used in place of half and half to lighten fat content...still absolutely delicious! Ingredients

    1 cup chicken breast, cooked and diced (may use rotisserie chicken)
    4 tablespoons butter
    4 tablespoons flour
    1 qt skim milk
    14 ounces chicken broth
    1/2 cup celery, diced
    2 garlic cloves
    1 cup diced carrots
    1 cup diced onion
    1 cup coarsely chopped spinach
    1/2 tsp thyme
    1/2 tsp parsley
    1 lb potato gnocchi



Directions

Sauté the onion, celery, and garlic in the butter , over medium heat when the onion becomes translucent, add the flour, and make a roux, let the butter and flour mixture cook for about a minute before adding 1 quart of skim milk.

Cook gnocchi according to package directions.

Into the roux add in the carrots and chicken. Once the mixture becomes thick add the chicken broth. Once the mixture thickens again, add the cooked gnocchi, spinach, and seasonings, simmer until soup is heated through.

Comments about this recipe: You can add more chicken if you like. While you could use left over cooked chicken breasts, I really think using the rotisserie chicken that are found in many grocery stores is the best way to get the optimal flavor of this soup.

    I added about 1 tbsp of garlic salt as it was a little bland. I suggest adding more chicken, a cup just didn't go far enough. Tasty with changes made! - 5/14/11
