Ingredients

    1 cup all purpose flour
    1 tsp baking powder
    1/2 tsp baking soda
    1/2 tsp cinnamon
    1/8 tsp salt

    2 TBS Canola
    1/4 cup unsweetened apple sauce
    1/2 cup Stevia (zero cal sweetener)
    1/2 cup light brown sugar
    1/4 cup egg substitute
    1 tsp vanilla

    1 1/2 cup rolled oats
    1/2 cup dried SunMaid Apricots

Tips

I substitute apricots with raisons or currants depending on what I have in the pantry.


Directions

Makes 36 cookies.

a) Preheat oven to 350 degrees F. Lightly spray cookie sheet with cooking spray or use silicone baking sheet.
b) In a medium bowl, mix flour, baking powder, baking soda, cinnamon and salt.
c) In a larger, separate bowl, whisk together the Canola, apple sauce, granulated and brown sugars, egg substitute, and vanilla.
d) Add the flour mixture to the canola/egg mixture and mix well.
e) Fold in oats and apricots. Drop rounded tablespoons onto cookie sheet two inches apart.
f) Bake for 10 to 12 minutes. Remove from oven and place on cooling rack. Makes 36 cookies.
