Ingredients

    Ingredients:

    1 cup sorghum flour
    1/4 cup tapioca flour
    4 tbsp vegan granulated sugar
    1/2 tsp xanthan gum
    2 tsp baking powder
    1/2 tsp salt
    about 1 1/2 cups non-dairy milk
    1 tbsp olive oil
    1/2 cup creamy peanut butter
    1 medium sized banana- thinly sliced
    3/4 cup raw shredded (unsweetened) coconut
    1 tbsp vinegar
    vegan margarine for cooking

Directions

Mix all dry ingredients, then add in all wet ingredients. Mix well. Add in banana and coconut. Then, add more milk or water to get to the consistency you are looking for.

Add some cooking spray or other fat to the griddle and cook until done. These do take a while to get done because they are ERY puffy. So be patient. It's worth it.
