Introduction

A sweet twist on couscous. Perfect for dessert or a yummy late night snack! A sweet twist on couscous. Perfect for dessert or a yummy late night snack!
Number of Servings: 1

Ingredients

    1/3 cup water
    3 baby carrots - sliced into thin strips
    1/4 cup skim milk
    1/8 cup dry couscous
    1 tsp. Shedd Spread
    1 tsp. Stevia or your favorite sweetener
    2 tsp. honey
    dash of salt

Directions

Put water and carrots in a microwave safe bowl. Steam in microwave for 2 to 3 minutes or until desired softness is reached (I like mine slightly crunchy!). Drain carrots and pat dry with a paper towel. Set aside. Pour milk and Shedd spread in a microwave safe bowl. Heat for 1 to 1:15 minutes. Remove and add the Stevia, honey, and salt. Stir until well combined. Pour in couscous and cover. Allow the couscous to rest for 8 to 10 minutes.

Feel free to add your own flavoring and spices! Serve this warm or cover and refrigerate for a cold treat.

    Very Good
    It was surprisingly good, it sounded quite interesting so I thought we'd give it a try, and we loved it. We will definately make it again. - 1/13/08
