Introduction

Ingredients

1 16oz. pkg Lentils
8 Cups Water (up to 10 Cups)
1 12 oz. can V8 juice
3 Cups Chopped Cabbage
1/2 Cup Red Onion Chopped
1/2 Cup Spanish Onion Chopped
1 6oz. can Garlic Tomato Paste
1/2 Cup Lemon Juice
1 tsp. Garlic Salt to taste
Directions
Boil 8 cups of water and add lentils to a large stock pot cooking on medium high for about 25 minutes. Add Cabbage, Onion, Tomato Juice, Tomato Paste, and Lemon Juice and cook on high for about 5 minutes and add garlic salt. Add more water to desired consistency and continue stirring occassionally on medium low for the remainder of cooking time.
To make more of a stew-like consistency, simmer on low for an additional 15-20 minutes. Another option is puree-ing 2 cups of liquid and lentils in a food processor and adding back to the stock pot. Add additional garlic salt and pepper to taste.
A great addition to this soup is ground beef (for more of a mixed polish goblaki-like meal), shredded chicken, or sausage for a protein kick. This can be added after cooking. Enjoy!
