Ingredients

    Egg white, 1 serving
    Egg, fresh, 1 extra large
    Green Peppers (bell peppers), 2 tbsp
    Onions, raw, 2 tbsp
    Mushrooms, fresh, 3 medium
    Oregano, ground, 1 tbsp
    Parmesan Cheese, grated, 2 tbsp
    Salt, 1 dash
    Olive Oil, 1 tbsp

Directions

Brush olive oil in the bottom of your favorite saute pan. Coursley dice vegetables, place in saute pan.Add seasoning. Saute over medium heat for 5 minutes stiring occassionally. Meanwhile, separate egg yolk from white. Add to egg white one whole egg. Wisk untill smooth. Sprinkle 1 tbsp grated parmesian cheese. Pour egg over all vegetable being careful to evenly cover.
Let simmer for 2 minutes. With a large enough spatula to lift, flip egg and vegetable combination and cook for 1 more minute lift or slide onto plate. Garnish with a few reserved peppers add sprinkle remaining parm cheese. Grind fresh ground,mixed pepper corn. Serve with garlic and pine nut cous cous or toasted sprouted grain bread. aside of fresh fruit of your choice.
