Ingredients
-
For mushrooms:
Olive Oil, 2 tsp
Mushrooms, fresh, chopped (2 8-oz. containers) 448 grams
Onions, raw, chopped (2 small)196 grams
Garlic powder, .25 tsp
Salt, 7 grams
Thyme, fresh, 2 tsp
2 Bay Leaves, fresh or dry (remove before eating)
For bagel chips:
Whole Wheat Bagel, 4 serving
Pam Original No-Stick Cooking Spray, 0.27 gram
Garlic powder, .25 tsp (remove)
Directions
Heat oven to 400 degrees. Cut bagels in half, then into quarters. Cut each quarter into two slices - each bagel will result in 8 slices. Place bagel slices on a cookie sheet fitted with a cooling rack. Spray bagel chips with cooking spray and sprinkle with garlic powder. Cook for 14 minutes or until just browned. You can cook longer if you want them more crisp, but 14 minutes seems to be about right.
Heat olive oil in pan over medium heat, add mushrooms, onions, garlic powder, salt, thyme and bay leaves. Cook over medium heat, stirring occasionally, until mushrooms are browned and onions are translucent. Remove bay leaves and serve with bagel chips.
This is better if you add a tablespoon of butter near the end of the mushroom mixture's cooking process...
