Ingredients

    1-1/2 (to 2) lbs pork, fat trimmed & cut into large chunks (appox. 1 to 1-1/2 in.) (** see note)
    3 medium apples, coarsely chopped
    2 medium onions, halved & sliced into rings
    1 T. ground or rubbed sage
    1-1/2 t. salt
    4-1/2 c. long-grain brown rice, cooked (1-1/2 c. dry)

Directions

Combine all ingredients and cook on low 7-9 hours or high 3-4 hours.

Shortly before serving, cook 1-1/2 c. long-grain brown rice according to package directions. Yields about 4-1/2 c. cooked.

Serve 1/6 of the crockpot mixture on top of 3/4 c. cooked rice.

** Note: Using 2 lbs pork tenderloin in this recipe increases the nutritional info to 532 calories & 14 grams of fat per serving.
