Introduction

My changes to the Gypsy soup recipe found in Mollie Katzen's Moosewood Cookbook to reduce fat, calories and sodium. If you leave out the soy sauce all together (I think it tastes fine) it is amazingly low in sodium!! Ingredients

    Olive Oil, 1 tbsp
    Onions, raw, 2 cup, chopped
    Garlic, 2 tsp
    Sweet potato, 2 cup, cubes
    Celery, raw, .5 cup, diced
    *Tomatoes, red, ripe, canned, whole, no salt added, 1 can
    *green bell pepper, .75 cup
    *Chickpeas (Garbanzo Beans) Mature Seeds - Cooked without salt, 1.5 cup
    Water, tap, 3 cup
    Paprika, 2 tsp
    Turmeric, ground, 1 tsp
    Basil, 1 tsp
    Cinnamon, ground, dash
    Pepper, red or cayenne, dash
    1 Bay Leaf
    *Kikkoman low sodium soy sauce, 1 tbsp (optional- omit for very low sodium)

Directions

Saute onions, garlic, celery and sweet potatoes in olive oil about 5 minutes. Add all other ingredients except tamari (soy sauce). Simmer on stove until cooked (about 45 min.) or throw in crock pot and cook until tender. Add 1 T. low sodium soy sauce right before serving if using. Without soy sauce= 37.5 mg. sodium per serving. With soy sauce= 181.2 mg. sodium per serving.
