Never made this before, used what odds and ends I had in the fridge from other meals in the past couple of days. Turned out so well, my boyfriend told me to save it as a "real" recipe. Ingredients

    Italian Sausage, pork, 2 link, 5/lb
    roasted red pepper 1/2 pepper
    Ragu Old World Style Spagetti Sauce, 1.5 cup
    Dreamfield's Penne - 2 cups
    Spinach, fresh, chopped, 1 cup
    Ricotta Cheese, part skim milk, 12 oz
    Shredded Mozzerella, 1 cup
    one egg
    3 Cheese Blend - 0.5 cup

Directions

Cook pasta as directed.

While pasta is cooking, remove sausage from casing and brown in pan. Add chopped red pepper and sauce and heat through.

Combine spinach, egg and cheeses, RESERVE 1/4 c parmesan and 1/2 c mozzerella. When pasta is cooked, stir pasta into cheese mixture.

Put 1/2 of sauce in bottom of 8" square pan, spoon pasta mixture into pan, and top with remaining sauce. Sprinkle reserved cheese on top and bake at 350 for 40 minutes.
