Ingredients

    4 small potatoes, thinly sliced
    1 Cup - Carrots, thinly sliced
    1 Cup - Onions, thinly sliced into rings
    1/4 tsp - Dried Dill Weed
    Ground Pepper to taste
    4 - 5oz Fish Fillets

Directions

Serves 4
Preheat oven to 450F
Cut 4 - 18" squares of aluminum foil
Spray one side w/ non-stick cooking spray
Arrange potato, onion & carrot slices on foil in layers
Sprinkle with dill & a dash of pepper
Cover vegetables with fish filets
Fold foil over fish & vegetables, sealing edges
Place packets on a baking sheet
Bake for 30 to 35 minutes or until fish flakes easily with a fork
