Introduction
I took a mostly vegetarian recipe (because the ingredients looked great), and added extra lean ground beef because my family loves the beef in chili. Ingredients

1 sweet onion, chopped
1 green pepper, chopped
1 glove of garlic, crushed
1 tsp olive oil
1 lb extra lean ground beef
2 T chili powder
1 tsp cumin
1/2 tsp cinnamon
1 cup red wine
2 14 oz. cans diced tomatoes
2 15 oz. cans of beans (I use one light kidney, one dark kidney), drained
2 bay leaves
2-3 cups vegetable broth
1 cup diced zucchini
1 cup sliced mushrooms
1/2 cup sliced green olives
Directions
1. Heat olive oil in dutch oven or large soup pot. Add garlic, onion and pepper and saute over med-high heat for a few minutes.
2. Add ground beef and all the spices except bay leaves. Brown meat.
3. Add red wine and drive off alcohol.
4. Add tomatoes, broth, beans and bay leaves. Simmer for 10-15 minutes.
5. Add remaining ingredients (zucchini, mushrooms, green olives) and cook until they appear done (about 10 minutes).
Makes 16 1-cup servings. Enjoy!
