Introduction

Ingredients

    Tomatoes 4 medium
    Green Bell Pepper 1 small
    Garlic Cloves 3
    Onion 1 Small chopped
    Granulated sugar 1 tsp
    Parmesan Cheese 5 Tbsp Microplane Grated
    Tomato Paste 30 Grams 1-2 Tbsp for thickening
    Extra light olive oil 1 tbsp
    Zucchinin 2 cups chopped
    Italian Seasoning 1 Tbsp

Directions

Heat olive oil in fry pan, add onion, cook until transluscent, add garlic, cook about 30 seconds, add remaining ingredients with the exception of zucchini. Simmer stirring often until vegetables are soft. Mash with a potato masher until desired consitancy. Add zucchini and cook until tender. Serve over pasta or over a mixed vegetable medly for an even healthier vegan choice. Vegitarian/Vegan omit cheese.
