Introduction

I found this recipe on Food Network by Alton Brown, it is the best Mac and cheese i have ever had and everyone i have made it for loves it. I changed it a bit with the 2% milk and 2% cheese to cut some calories. Please enjoy!!! Ingredients

    .5 lb macaroni
    3 tbs unsalted butter
    3 tbs flour, white
    1 tbs ground mustard
    1/2 cup chopped onion
    3 cups milk 2%
    1/2 tsp paprika
    1 Bay leaf
    1 egg, lg
    2 cups shredded chedder cheese 2 %
    salt to taste
    pepper to taste

    3 tbs unsalted butter
    1 cup Panko bread crumbs

Directions

preheat oven 350 degrees
Boil macaroni according to package directions for Al Dente

In a lg sauce pan melt butter, add flour and mustard and wisk constantly over med heat for 5 min. do not let brown.

add milk, onion, paprika and bay leaf and cook 10 min stir frequently. sauce will thicken.
remove bay leaf

turn off heat, temper in egg, add 2/3 of cheese, salt and pepper incorperate completely. Fold in Macaroni

put in oven safe baking dish coated with non stick cooking spray
melt butter add panko to butter and coat thoroughly
top macaroni with remaining cheese, breadcrumb mixture , and bake at 350 degrees for 30 min.
let rest 5 min and serve
makes approx. 10 -1 cup servings
