Ingredients

    4 cups calebaza squash, cubes
    1 cup baby carrots, cut into thirds
    1 cup chopped onions
    1 T olive oil
    Seasoning to taste, I use Lemon Pepper

Directions

Toss vegetables, oil and seasoning. Place in glass 8 inch square pan. Cover with Press N Seal Glad Wrap. Microwave on high for 6 minutes.
