Introduction

Ingredients

    16 oz. frozen spinach
    2 cups cooked rice
    1 1/2 cup shredded mozzarella or cheddar cheese
    3 eggs, beaten
    2/3 cup milk
    2 tsp salt
    1 tsp Worcestershire sauce
    1 tsp thyme or Italian seasoning

Directions

Cook spinach according to package directions; drain well, squeezing out any excess liquid
Combine spinach with remaining ingredients in a large mixing bowl. Pour into a greased 9x13 inch pan. Cover with foil and bake at 350 degrees for 20 minutes. Uncover and bake 5-10 minutes or until set.

Cut into 16 squares.

    Incredible!
    Serving size was quite small, but still totally worth the 170 calories for a double serving! I set aside a bit of the cheese to top the casserole instead of mixing it all in and used only half the salt. Absolutely delicious! - 3/4/09
