Introduction

These muffins can be quite dense - for a lighter muffin, add oil and reduce veg. You can also replace the spinach, muffin & cheese for about 200g of any combo you like. Ingredients

    Organic wholewheat flour, 225 gram(s)
    Baking Powder, 1 tsp
    Spinach, fresh, 150 grams
    Onion, medium, raw, 50 gram(s)
    Feta Cheese, 50 grams
    Herbs to taste
    Milk, 2%, 175 mL
    Canola Oil, .2 cup
    Egg, fresh, 1 large

Directions

Preheat the oven to 180C.
Mix all the dry ingredients and veg. Then add the liquid and fold until you stop seeing dry flour (overmixing will create tough muffins)
Divide the mix into a 12 muffin pan & bake for 20 -25 minutes or until cooked through and golden brown.
