Ingredients

    Cantaloupe, 2 melon, large (about 6-1/2" dia) (remove)
    Red Ripe Tomatoes, 16 medium whole (2-3/5" dia) (remove)
    Cucumber (peeled), 2 large (8-1/4" long) (remove)
    Ginger Root, 1 tsp (remove)
    Basil, 4 tbsp (remove)
    Lemon juice, 1.75 tbsp (remove)
    Water, tap, 2 cup (8 fl oz) (remove)

Directions

1.) Puree Tomatoes in a blender or food processor until smooth.
2.) Remove all but ½ cup to a large bowl.
3.) Add cucumbers and onion to the half cup of tomatoes left in the blender and puree.
4.) Combine blended mixture in a large bow with tomatoes.
5.) Stir in stock, salt, pepper, ginger, lemon zest and juice. Chill several hours.
6.) Combine melon chunks with basil and chill.
7.) To finish, combine soup and melon chunks.

To serve: Pour soup into chilled bowls and put a few spoonfuls of melon into each. Garnish with mint leaves.
