Ingredients

    1.75 lb pork loin, all visible fat removed
    2 cloves garlic, minced
    1 small onion, chopped
    1.5 C brown rice
    2.5 C chicken broth
    1 15 oz can black beans, rinsed and drained
    1 15 oz can diced tomatoes with green chilies
    1 15 oz can diced tomotoes
    10 oz pkg corn, frozen
    1 C salsa *(mango with peach)
    1 tsp chili powder
    1 packet fajita seasoning

    *I used mango with peach salsa because that is what I had on hand. You could use whatever variety you would like, it may change the nutrition info though.


Directions

Cut pork into bite size chunks. Saute pork, garlic and onions in skillet until pork is browned and onions softened. In a large bowl combine remaining ingredients with pork mixture. Poor into a 4qt casserole dish that has been sprayed with non stick spray. Bake at 350 for 60-70 minutes.
Makes 12, 1.25 Cup servings

Makes a very large amount, recipe could be halved. Would be good for a potluck.
