Introduction

Ingredients

    2 boneless, skinless chicken breasts, sliced
    Red and Yellow Bell peppers, thinly sliced
    Red onions, thinly sliced
    10 cloves of garlic, roasted

    White Sauce
    1 Tbsp butter
    2 Tbsp flour
    3/4 C milk, hot

    Scampi Sauce
    3 Tbsp butter
    2 Tbsp crushed garlic
    2 C chicken broth
    1/4 C white sauce

Directions

Preheat Oven to 350 degrees

White Sauce:
Melt butter in a sauce pan and then add flour. Cook on medium for about 2 minutes, stirring constantly. Add in the milk slowly. Set aside and keep warm.

Roasted Garlic:
Separate garlic heads into individual cloves, still in their casings. Toss lightly in olive oil and sprinkle w/ salt. Wrap tightly in aluminum foil and bake for 30 minutes. When cool, squeeze out of their casings.

Scampi Sauce
Heat the butter over low heat. Add in garlic and salt. Cook for about 2 minutes on low heat and then begin adding chicken broth with a whisk. Add freshly ground pepper to taste. Stir until combined. Add white sauce and cook til slightly thickened.

Chicken:
In large skillet, sauted sliced chicken breasts in a bit of olive oil. When the chicken is almost done, add sliced peppers and onions and continue to saute until the chicken is done. Stir in scampi sauce and let simmer until everything is well blended.

Serve over Angel Hair.
