Introduction

This casserole came about when I was planning to make broccoli casserole and realized my broccoli was gone. It's almost identical using cauliflower, and it tastes fantastic! Number of Servings: 10

Ingredients

    1 medium head of cauliflower
    1 can 98% fat free condensed cream of mushroom soup
    2 eggs
    1 C shredded cheddar cheese
    1/2 C reduced fat mayo such as Hellman's Light
    8 Whole Wheat butter crackers such as Ritz
    2 T butter, melted
    salt and pepper to taste

Directions

Steam cauliflower. In casserole dish, combine cauliflower, soup. eggs, cheese, mayo, salt and pepper. Mix well. Crumble crackers over the top. Pour butter over the crackers.

Bake at 350 for 40 minutes.

Makes approximately 10, 1/2 C portions.
