Ingredients

    2 Tbsp Olive Oil
    12 Baby Carrots, Chopped
    3 stalks Celery, Chopped
    1 small Onion, Chopped
    3 cloves Garlic, Chopped
    1 Tbsp Curry Powder (or more)
    1 Bag Yellow Split Peas (2-1/2 cups)
    6 Cups Vegetable Broth
    2 tsp Salt (or to taste)


Directions

Heat Olive Oil in soup pot. Add carrots, celery, onion, garlic and curry powder. Cook for 5-10 minutes over medium heat until lightly browned.

Add broth, split peas and salt. Bring to a boil, reduce heat and cook for 1 to 1-1/2 hours until split peas are soft. Add water if needed, and more curry or salt if desired.
