**Flax Seed Meal (ground flax), 2 cups (remove)
Baking Powder, 3 tsp (remove)
Salt, 1 tsp (remove)
*Splenda, 1 or 2 tablespoons(remove)
Egg, fresh, 5 large (remove)
Water, tap, 1/2 cup (8 fl oz) (remove)
*Canola Oil, 1/3 cup (remove)
Directions
1.
Preheat oven to 350 degrees. Prepare a 10x15 pan with sides (a cookie sheet works well) with oiled parchment paper or a silicone mat.
2.
Mix dry ingredients with a wire whisk.
3.
Combine wet to dry and mix well. Make sure there are no obvious strings of egg whites hanging out in the batter.
4.
Let batter set for 2-3 minutes to thicken up a bit. Don't leave it too long or it will be difficult to spread.
5.
Pour batter into pan and spread with a rubber spatula, about 1-2 inches from the edge of the pan. For thinner bread, go all the way to the edge.
6.
Bake for about 20 minutes, check at 15 if you've spread the batter thinly. When the top springs back, it should be done.
7.
Cool and cut into whatever size pieces you want. At 12 servings, each slice of bread has less than one carb, about 0.8. And 5 grams of fiber.

The first time I made this bread, I expected it to be either thick and tough, or so crumbly it would be useless for sandwiches. I was WRONG on both counts. It is surprisingly spongy and holds together well. I've made sandwiches with it and it works perfectly. My husband is diabetic, and this bread did not affect his blood sugar at all. We will be making a LOT of this bread!

Tips & Warnings
• You can find flax meal in the bulk section of your supermarket.
• After cooling, store bread in a plastic zipper bag to keep fresh.
• My husband says it's best fresh out of the oven -- but then, what bread isn't?
• You can always adjust the amount of sweetener you use. I only use one small packet of Splenda to my recipe.
