Ingredients

6 c Water or Vegetable Broth
5 c Sweet Potatoes cubed (about 2 medium potatoes)
1.5 c Yellow Onions diced
1 c thinly Carrot sliced
.33 c Peanut Butter smooth
2 Garlic cloves
1.5 TB fresh Ginger, peeled
1.5 tsp ground Cinnamon
.25 tsp ground Cloves
1 tsp Curry Powder
.5 tsp crushed Red Pepper
2 TB freshly squeezed Lime Juice
.25 c Soy Sauce
.25 c fresh Cilantro
Directions
1. In a medium pot over medium heat, add 4 cups of water, sweet potatoes, onions, carrots and celery. Cover and cook for 5 to 10 minutes or until potatoes are tender.
2. Meanwhile, blend the peanut butter, garlic, ginger, cinnamon, coriander, cloves, curry, crushed red pepper, lime juice and soy sauce in a blender or food processor. Add 3 and a 1/2 cups of the cooked vegetables and broth, and blend again on high until smooth.
3. Add remaining 2 cups of water to the pot temperature and transfer the blender contents to the pot aw well. Heat to your desired temperature and allow to simmer for 5 minutes. Add cilantro when when you are ready to serve.
