This recipe is an adaptation of SP user QUILTBUGI's keema. This is a low sodium recipe, feel free to increase or decrease the spices...can be served over rice or pasta....I like this without the pasta or rice...VERY filling.If you don't want to use the marsala, I would substitute some balsamic vinegar or fresh lemon juice. Ingredients

1.5 lb lean ground beef
1 large onion, diced medium
3-5 cloves of garlic (to taste), minced
1 large sweet potato, medium dice, with skin
1 (15 oz) can low sodium diced tomatoes
1 (15 oz) chick peas, rinsed
1 large eggplant, diced
1-2 tbsp curry powder (to taste)
1-2 tbsp pumpkin pie spice
3 cups V-8 juice (low sodium)
1/4 cup raisins
6 large pieces candied ginger (minced)
10 oz sugar snap peas, chopped large
1/2 cup marsala wine (or vinegar of your choice)
Directions
1) Brown onions and ground beef in large frying pan.
2) Add other ingredients and bring to a boil.
3) Reduce heat and simmer (covered) for 1 hour (or until potatoes are tender). Remove cover and simmer until desired thickness is achieved.
