Ingredients

    - 1 Hormel Always Tender Pork Tenderloin (original flavor)*
    - 1 and 1/2 cups of dry lentils (about 3/4 of a standard bag)
    - 1 cup of carrots, chopped fine
    - 1/2 cup of onions, chopped fine
    - 2 cloves of garlic, smashed
    - 1 bay leaf
    - 1 teaspoon dry thyme
    - 1/4 teaspoon ground coriander
    - 1/4 teaspoon freshly cracked pepper
    - 4 cups unsalted chicken stock
    - approximately 2 cups water

    * Note: the nutrition information is for the peppercorn flavor, but I have noted that they are extremely similar in nutrition. The peppercorn version may also be very tasty in this recipe.

Directions

Put all ingredients except the water in your slow cooker. Add enough water to mostly, but not entirely, cover the tenderloin. Cook on high for 4 hours or low for 8 hours, stirring occasionally, and making sure the water level doesn't drop below the top of the lentils.

When cooked, chop the pork across the grain to kind of shred the meat, and serve as a stew. Remember to remove the bay leaf before serving! Makes 6 1-cup servings.

    Very Good
    Not a huge pork fan but it was quite good. The pork was very tender. I should have minced the garlic though. - 9/1/13
