May also be used to fill 2 pie shells. This recipe is much lower in sugar (about half) and carbs and fat than most pie filling recipes. Serve with or without topping. Ingredients

    # cups canedn pumpkin
    4 large eggs
    3/4 can of evaporated skim milk
    2/3 cup of honey and or raw sugar ( I use 50/50)
    whatever spice mix you like with pumpkin. To use for a side dish, you can eliminate the sweetener and/or spices.

Directions

Preheat to 450. Stir everything together, whisk until smooth. pour into baking dish.
Put into 450 degree oven; after 15 minutes, lower to 350. Bake 40-50 min @ 350 ( or until knife comes out clean).
