Introduction
I used an Oatmeal Chocolate Chip cookie recipe that I grew up with and gave it a healthy twist. It could be healthier if you used all unsweetened ingredients, use agave nectar instead of sugar, whole wheat flour in place of the white flour and 4 eggs whites in place of the 2 eggs. Ingredients

1/2 cup margarine
1 cup sugar
2 eggs
1/2 cup milk
1 2/3 cup oatmeal
1 1/2 cup flour
1 tsp baking soda
1/2 cup buttermilk (or milk with 1 tsp vinegar in it)
1/2 tsp salt
1 tsp cinnamon
1 tbsp ground flax seed
2 tbsp flax seed
1/2 cup unsweetened shredded coconut
1 cup chocolate chips
1/2 cup trail mix with almonds, cashews, raisins, craisins, currants, pumpkin seeds, sunflower seeds, peanuts
Almonds, (0.07 cup, whole)
Cashew Nuts, dry roasted, (0.07 cup, halves and whole)
Peanuts, dry-roasted, (0.03 cup)
Sunflower Seeds, without salt, (0.02 cup, hulled)
Raisins, (0.02 cup, packed)
Black Currants, dried, (0.02 cup)
Cranberries, dried, sweetened (craisins), (0.02 cup)
Pumpkin Seeds, (0.02 cup)
Directions
Preheat oven to 375.
In a cup whisk together the buttermilk and baking soda until it foams up, set aside.
In a large mixing bowl cream together the margarine, sugar, eggs and milk with wooden spoon. Mix in the buttermilk mixture. Add oatmeal and flour, mix until smooth. Add all the rest of the ingredients. Mix until well blended.
Scoop dough with a spoon onto cookie sheet(s). Bake for 8-12 minutes. Let cool on cooling rack.
Makes 36 (2inches) cookies.
