    1 cup onions, chopped
    1 can diced green chilis
    1 tbsp extra virgin olive oil
    1 can diced tomatoes
    1 can cannellini beans
    1 can black beans
    2 cups shredded turkey
    Dash of cayenne pepper (optional)
    2 tsp cumin
    1 tsp chili powder


Heat a 2-quart pan with olive oil and sauté the onions and diced chilis. Once the onions soften, add the tomatoes with the liquid, as well as the two cans of beans with their liquid. Let the mixture simmer a few minutes, then add the shredded turkey. Add the spices, then allow the chili to simmer for 30 minutes.

  • My serving size was 1 cup. I added a carton of chicken broth and an extra can of tomatoes to make it stretch. My family LOVED this! - 12/1/14

  • Yeah.. I had not had luck with turkey chili before. I used just a can of chickpeas, since I had them open. I used no salt tomatoes and didn't use the water from the beans, to reduce sodium. Filling and a great use of leftover turkey. I will make sure not to add too much red pepper next time. - 4/12/12

  • This was GREAT! I had to add a can of water and another can of tomatoes (it did not indicate how large of a can of tomatoes to use), and it turned out delicious! Used our own dried green chilies.. yum! - 1/17/12
