Ingredients

1 1/2 cups Natural low-fat yogurt
2 tsp clear honey
2 medium carrots, shredded (or finely chopped)
2 green onions, roughly chopped
1 1/2 cups cabbage, finely shredded
1/3 cup dried cranberries (or sultanas. I like cranberries better)
1/2 cup cashews, option (not included in calories)
16 white grapes, halved
1/2 tsp salt
6-8 oz. grilled chicken breast, diced (recipe figured for 8 oz)
Directions
Using a fork, beat the yogurt and honey together in a bowl.
Mix together the carrots, spring onion, cabbage, cranberries (or sultanas), cashews (if using), grapes, salt, and diced chicken.
Pour the sweetened yogurt mixture over the salad, blend everything together, and serve.
Makes 4 servings
Note: I don't remember how long it really took to make this recipe. The biggest portion of time would be shredding and chopping. I'm also not sure the size of servings, as I made this recipe for a potluck so didn't measure. I would guess 1-cup.
