Introduction

An appetizer that will even make kids eat their spinach! An appetizer that will even make kids eat their spinach!
Number of Servings: 30

Ingredients

    10 oz frozen chopped spinach, thawed, drained and squeezed
    2 tbsp olive oil
    1 1/2 tsp garlic powder
    1 cup stuffing mix
    6 egg whites or equivalent in egg substitute
    1/2 cup onion, chopped/smalldiced
    1/4 cup Parmesan cheese
    1 tbsp pepper

Directions

Mix all ingreients and chill for a minimum of 2 hours, or overnight.
Roll into 1" balls and bake at 350 F for 20-25 minutes.

Makes 25-30 balls. The nutritional info is for 30 balls... how many of them you'll eat is up to you. :o)
