Introduction

I got this recipe from Allrecipes.com and cut in half from 6 to 3. I used a two cup mixture of white and dark turkey meat. If you serve it with rice, you might want to increase the enchilada sauce. Ingredients

    1 cup of shredded cheddar and Monterey Cheese (4 ounces)
    1 /2 chopped onion
    1 ounce of chopped black olives (more if you like)
    12 (6 inch) corn tortillas
    1 10 ounce can of enchilada sauce
    2 cups chopped turkey (8 ounces)

Directions

Preheat oven to 350 degrees. Lightly grease a baking dish (9X13 if you double the recipe for 6, or smaller if you follow the recipe for 3).

Combine cheese, onion and black olives.

In a skillet heat tortillas until warmed and soft. Remove and dip them in the enchilada sauce to coat.

Add turkey and cheese mixture to center of tortilla, roll and place in the prepared dish. Repeat until bottom layer of pan is covered with enchiladas. Spread remaining sauce over bottom layer to cover.
