Ingredients

    * Mushrooms, fresh, 9.5 cup, pieces or slices
    * Onions, raw, 1 cup, chopped
    * Olive Oil, 1 tbsp
    * Turkey Broth, 12 cup
    * Garlic, 2 tsp
    * Nutmeg, ground, 1 tsp
    * Thyme, fresh, 1 tsp
    * brown rice (2 cups cooked)
    Turkey, 2 cups
    salt, pepper, to taste

Directions

One serving = two cups. This recipe makes 10 servings

Throw turkey bones and scraps in a stockpot and cover with 15 cups of water. Simmer for two hours. Strain and cool.
Braise onions and garlic in oil until translucent, then add stock, mushrooms and seasonings. You can use any combination of fresh mushrooms. Simmer 90 minutes, stir in a cup of cooked brown rice and serve.

If you smoked your bird, making your stock from a smoked turkey carcass adds an extra depth of flavor.
