Ingredients

Simple Tuna Pasta Salad

1 can of tuna fish packed in water
1 cup elbow macaroni, dry
4 tbsp of mayonnaise
2 tbsp of finely cut basil
1/2 cup grated carrots (byproduct of my juicer)
pepper and salt to taste
(*peas, raisins, dried red peppers and chopped celery can also be added to tasty up this dish)
Sesame Asparagus
------------------------------------
1/2 bunch of fresh asparagus
2 tbsp of extra light olive oil
1 tbsp of sesame seeds
1 tbsp of balsamic vinegar
Directions
(serving size approx. 4)
Simple Tuna Pasta Salad
------------------------------------
1. Combine the cooked and drained pasta with the drained tuna, grated carrots, basil and mayonnaise. Add salt and pepper to taste.
Sesame Asparagus
------------------------------------
1. Snap off tough ends of asparagus and peel any thick stalks.
2. Place asparagus in baking dish or pan sprayed with oil or lined with foil.
3. Sprinkle with olive oil and balsamic vinegar and salt to taste.
4. Place under preheated broiler for 10 minutes or until tender.
5. Sprinkle with sesame seeds 2-3 minutes before done to prevent them from burning.
