Ingredients

    1 head of cauliflower
    10 squirts of I Can't Believe It's Not Butter Spray
    1 tbs minced garlic
    1 tbs red pepper
    3/4 cup Parmesan cheese
    1 cup non-fat cottage cheese
    2 tbs non-fat sour cream
    1 cup chicken broth
    1/2 tsp white pepper
    1/2 tsp salt


Directions

Boil cauliflower in a pan until mushy. In a food processor blend cottage cheese, minced garlic, red pepper until smooth. Add cheese mixture to a medium size pan, add Parmesan cheese, salt and pepper and butter spray. Simmer for 2 minutes. Drain cauliflower and blend in a food processor with chicken stalk. Add cauliflower puree into cheese sauce and mix together well. Heat until warm. Serve over favorite pasta.
Makes 8, 1/2 cup servings.

    Incredible!
    In tried this recipe because I've just discovered zucchini noodles! So I tried this sauce over these noodles, wow!!! It was amazing!! Not at all like Alfredo but very good and nutritious. I will cut down on the garlic next time. It was a little much. Yield was 40 ounces!! - 9/1/16

    Bad
    I made this recipe with high hopes. I am sorry but it was really, REALLY bad. It tasted like cauliflower over seasoned with red pepper. There was NO alfredo like taste at all. The texture was like cream of wheat. No one in my family would eat this. I had to throw it away and I hate wasting food. - 9/28/11

    That's too bad :( I know that everyone has different tastes. I'm not sure what type of food processor you used, but it definitely needs to be processed until it is smooth. I didn't have that experience of cream of wheat? But, I also like cream of wheat too lol so?
