Introduction
A quick and easy oil and vinegar tuna salad, great for weeknight meals. Change vegetables and seasoning to match your preference or use what you have on hand, helping you clear out the vegetable bin . Leave out the nuts to drop almost 40 calories and 4 grams of fat, or exchange for walnuts to increase the omega-3. You can also decrease the amount of olive oil if you prefer a drier mix, which would also reduce the calories and fat. Serve on lettuce, as a sandwich, or with a warm crusty bread. Or eat by itself, and save the calories for dessert. :) A quick and easy oil and vinegar tuna salad, great for weeknight meals. Ingredients
-
Chunk Light Tuna in Water - Two 5 oz. Cans
Chives / Green Onions
Celery
Dill Weed (Dried or Fresh)
Extra Virgin Olive Oil
Red Wine Vinegar
Lemon Juice
Pine Nuts
Directions
Chop the celery and chives. Mix in serving bowl with tuna and nuts. Season to taste. I prefer this a little on the tart side; decrease the amount of vinegar if you do not. Serves four with .25 cup servings, but I prefer a serving size of three.
