Ingredients

    • 1 Package of pre-made whole wheat pizza dough. (yields 1 pizza)
    • ½ tsp rosemary and Italian herb blend
    • ½ tsp garlic powder
    • About 4 tablespoons of Red Pepper dip and spread. (From Trader Joe’s, but can easily be substituted with pureed roasted red peppers/tomatoes, Italian herbs, and a little olive oil)
    • 2 Cloves of Garlic (Minced)
    • About 2-3 cups Arugula (enough for a layer over your pizza)
    • About 1/3 of a finely sliced or chopped onion
    • 4 Sliced mushrooms
    • 3 broccoli florets, broken into small pieces
    • ¼ Cup of diced multi colored bell pepper.
    • 4 oz diced skinless, boneless, chicken breast
    • 2-3 oz (herbed) goat cheese broken up finely or crumbled.
    • 1 tbsp finely grated parmesan cheese (optional)
    • ½ tsp red pepper flakes (optional)
    • 1 tbsp balsamic vinegar (optional)

Directions

Makes 1 pizza that serves about 8 slices.Preheat oven to 450 degrees. Pat garlic powder, rosemary, and Italian herbs into dough and allow to rest on a floured surface for about 20 minutes. Meanwhile chop up all vegetables as specified. When dough has been rested stretch by hand, or roll out dough to preferred thickness, generally thin enough to fit a 12” diameter pizza pan, but whatever baking sheet or pizza stone you have works. Spray pizza sheet with cooking, spray and place rolled dough on it. Evenly spread red pepper sauce over dough. Follow by evenly sprinkling in order garlic, Arugula, onion, mushrooms, broccoli, chicken, bell pepper, and finally the goat cheese pieces. Add parmesan, red pepper flakes,(*can also sprinkle on more garlic powder, rosemary here), or Italian herbs, and drizzle balsamic if using. Bake for about 10 minutes until cheese is very soft and crust just begins to brown. Remove from oven and allow to cool for a few minutes before cutting into pieces. Enjoy!
