Introduction

potato kugel adapted from the Moosewood Cookbook potato kugel adapted from the Moosewood Cookbook
Number of Servings: 8

Ingredients

8 medium redskin potatoes, scrubbed and grated
3 medium onions, minced or grated
    1/4 c. whole wheat flour
    1/4 c. canola oil
    4 large eggs
    salt and pepper to taste

Directions

mix all ingredients EXCEPT the oil together. Meanwhile, put the canola oil in a metal 9X13 inch pan in the oven while it is preheating. When the oven and the oil are hot, remove the pan, pour the hot oil into the potato batter, and mix quickly. Dump the potato batter into the pan (it will sizzle a little). Smooth it out, but don't press it down. Bake at 350 for one hour or until golden and a little crispy. Serves 8. Very nice with applesauce and lite sour cream or Greek yogurt.

Thanks for posting! This is the same way my family makes these, we just use a bit less oil and baking potatoes. - 3/1/11
