Introduction

A yummy dish to start before you go to run errands and return to a great smelling house! Its a bit spicy, and I serve it over brown rice with a smidgen of light sour cream.. Ingredients

    1 boneless skinless chicken breast, left whole
    1 large can black beans or two regular cans
    .5 can corn or one ear corn with corn cut off
    1 can Rotel tomatoes and chiles
    1 can cream of chicken or cream of mushroom soup, or even cheese
    4 canned jalepenos, or fresh for spicier, diced
    1 package taco seasoning

Directions

Makes 8 one cup servings

1.Very simple...just throw everything in the crock pot on low for 4-5 hours or high for 2-3, chicken will shred easily. I throw it in before I go to work and come home to a houseful of wonderful smells!

2. You can also do the same on the stove top by just chopping chicken first, then simmering for an hour or so until chicken is tender.

3. Need dinner super fast? Brown chopped chicken breast, add remaining ingredients and boil on medium for twenty minutes.
