Ingredients

    1 cup lentils
    2 lrg carrots chopped
    1 med onion chopped
    3 cloves garlic minced
    1/2 cup rice
    1.5 cups frzn corn
    2 tsp olive oil
    3 med potatoes, cut up
    1 cn tomato juice
    6 cups water
    1 cup chicken broth
    3 med celery stalks, chopped
    1 T thyme
    1 T salt
    1 T pepper

Directions

Saute onion & garlic in olive oil. Soak lentils with enough water to cover for about 15 mins. Rinse and drain add to onion & garlic after softened. Add remaining ingredients cook until potatoes and rice are tender. About 45 mins.

    Incredible!
    Very hearty. Used precut chunks of butternut squash instead of potatoes, and tomato paste (less salt, I think) instead of tomato juice. - 9/16/07
